On bootup the Mac detects the connected display. I suspect when it finds none it doesn't load the video driver or somesuch behavior. I have a couple machines hooked up to a switchbox and if I reboot the Mac without having it's position connected to the monitor it will think there is no display there and the only way I've figured out to undo that is to reboot it with the display connected. Once it's convinced I no longer need the display connected.

Unless you already have one sitting around just begging to be used.
