The option that says download should be the correct one.

A Universal Binary is just jargon for an application that will run on both the Intel and PPC Macs.

You can remove extra languages by using a program called "Monolingual.". It is a small, free application, and is, as far as i can make out, 100% usable ith Voice Over.
