Everything else sounds like it's the result of not having your
folder open.  Regardless of subscription preferences, you're
only dealing with the podcasts through the unexpanded
folder. You can probably only play the latest episode when
you press carriage return while your VoiceOver cursor is on
the folder for your podcast subscription.  If the folder isn't open
you won't see the individual shows.  If you delete the
folder instead of individual podcast episodes, I think you've
removed your subscription.  At least, you've removed the
element you interact with to change settings about your
subscription, feed update, etc by deleting the folder for your
subscription.

Podcast subscriptions show up in their own library which is
separate from the Music library.  If you want to mix podcast
episodes with selections from your Music library, create a
playlist with entries from both libraries.

I also don't see all the shows in my music
folder under the specific pod-cast.

Are you talking about navigating through your Music folder
with Finder?  If so, you'll find all your podcasts under a
Podcasts folder organized by the name of the podcast.
For example, you might have

Music/iTunes/iTunes Music/Podcasts/Screenless Switchers -

in your account.

There is a "Show in Finder" option under the File Menu
of iTunes that brings up the location of any selected
track in iTunes.  The shortcut key is command+r. You
can navigate finder to view other files in the same folder,
move up a level by going into column view mode (command+3)
and using your left arrow key, etc.
