Hi Scott. Are you using Leopard? If so, you can always use the
quicklook panel on audio files you only want to hear once. This will
play the file and not bring it in to itunes. If you've not used
quicklook, all you have to do is press spacebar when finder is focused
on the file you want.

This is common behavior for ITunes, but you can turn it off in
