Normally you can click on a link in an email to bring it up in safari but if you want to copy the link to the clipboard for whatever reason move vo to the start of the link and press vo-return to start selection, move vo to the point where you wish to stop selection and press vo-return again to turn selection off, press command-c to copy the selection to the clipboard and then paste it where necessary.
