http://www.apple.com/accessibility is a good place to start, there are a few other good sites such as http://www.lioncourt.com, and http://www.screenlessswitchers.com (I hope I got the url correct and it's a podcast), and there's loads of other resources available. Others will be able to provide more info, but if you go into an Apple store, you might like to try control plus, option plus, command plus, f8 to bring up a VoiceOver quickstart tutorial which is very helpful.
