To my knowledge, the only VO accessible spreadsheet out there is
Tables. Its graphing capabilities are not very good, but it is good
for calculating equations and storing numerical data. In addition, it
opens and saves files in XL format.

microsoft office's functionality at my new job, and can't use it
because it's not usable with voiceover.
Any tips for any word processing program I can use other than the
basic text edit?
