OK sit mac and let me get technical here:

Most mac programs are written in XCode Apple development environment for Macs, iPhones, iTouch and other products. Mac programs are really bundles of files in a directory. When you make a Mac program you design the interface in the Interface Builder part of Xcode and the interface parts are stored in.nib files.

It is sometime possible to open the program, context menu over the program and choose "Show Package Contents" and find the nib files and edit them to have the accessibility tags that are needed. You can then save the nib files run the program and you will have access.

A few warnings here:

DO THIS ONLY ON COPIES OF PROGRAMS!
You can really hose a program doing this and you don't want it to be on your only copy of something.

It will not work all the time and you can not change custom controls which are often the problem.

It is a more or less visual test as far as I can tell. that may not be the case now however.
