You just install WebKit by dropping it on your applications folder, Safari does not change but you'll have a "new app" called WebKit in your apps folder.

Yes nightlies can be unstable... but it should not affect your regular Safari operations

If you are going to take the time to identify WebKit vs "other issues" then make sure you file any WebKit bugs to WebKit Bugzilla (distinct from bugs to Apple for shipping products) is a great way to get things fixed that may not be covered quite as well as they should be.

WebKit is related... Safari Mail, Dashboard etc rely on WebKit so
that's why a reboot was required...

You may find it worthwhile to run a nightlybuild-it frequently has
some fixes that make some sites actually usable. You can run both
WebKit nightly and Safari on the same machine.
