Ok, lets try answering at least some of these.

1. 5400 or 7200 rpm HD? Why?
The RPM really determines how fast the drive spins. I am using a 5400
drive in my mac. The only reason to really use a fast drive is for a
lot of audio track work. If you were running protools and needed 64
tracks of audio perhaps then I would say yes go for the faster one.
The more memory is really important rather than hard disk speed.
2. Can anyone recommend a portable flatbed scanner compatible with
Mac? What
about The Canon Pixma MP610? I am guessing that will be fine. I am
using a candoscan lide 90 for mine.
3. I need a good case that will hold the Mac, as well as a portable
flatbed
scanner. Also, I am totally blind, so I'd like something that can take
accidental bumps. Any recommendations?
Not really, any good mac bag will be fine. Many suppliers will help
you there.
4. Some students do not like to use a laptop keyboard, any
recommendations
for a portable keyboard Mac compatible? Bluetooth?
Yes, the apple keyboards are bluetooth, I am writing this on one.
5. What OCR software for Mac is the best?
I run a package called ReadIris. It is relatively accessible and
allows you to OCR a page and have it open in textedit for listening
to or saving.
6. What video adapters if any come in the box? You get a VGA adapter
and other connectors for linking up to standalone displays if you
need that.
7. How accessible is office for Mac? If not accessible, what
recommendations
do you have?
There are many word processing programs. Textedit is good enough for
simple stuff, but you may want to try out some of the alternative
ones that others will bring up.
