Scott, go in to mail preferences and press the accounts button. Under
the advanced tab, you'll find settings to do that. By default it
keeps messages on the server for a week, but there is a pop-up button
to change that to delete immediately.

What is happening here is after I recieve mail from my email
account, i then
check mail on my pc and those emails are still on the server.
I want them to actually be deleted after the mac recieves mail.
