VO-Shift-F3 to turn cursor tracking off, then you can do as Jessi says to get to the last message, but just leave the VO cursor there. You can write replies, and even use backspace and arrows to edit it, without moving the VO cursor. You can then just VO-Right to read new messages as they come in, including your own as you send them. With cursor tracking off at least, VoiceOver even saves your position in multiple chats, so you can Command-Accent from chat to chat and keep your place in each one. There's a Skype setting that decides whether chats are split into their own windows like that I think, but I don't remember just where it is at the moment.
