In addition to using Command-Up arrow or Command-Down arrow from the keyboard as Dan outlined, you can also use your Apple Remote to control the volume of what's played in iTunes or QuickTime (on an Intel Mac). The iTunes volume control can most easily be adjusted either with the Command-Up arrow or Down arrow key sequence, or with the Apple Remote. However, you can also interact with the volume slider in iTunes if you also want to hear the setting announced as a percentage of the maximum speaker volume of your system.
