Ooh, this might be of interest to some.  I just went to the
Plantronics site again and found an easier way to check compatibility
without going through the pdf.  It has a guide there.  When I told it
I was using Mac OSX, it suggested I use a USB headset.  Indeed, it
didn't give me any other options.  So I did a general search for
bluetooth headset and Leopard and found this.

Apparently, many people have had problems with Skype and bluetooth
headsets with Leopard.  Granted, this thread is a bit old (2007) and
it might have been fixed by now but I'm not too sure.  So is there a
way, other than bluetooth, to use a wireless headset?  I know that
there are cordless usb phones, so maybe, there's something similar
here?
