You can sync by selecting the songs you like from the "Misic" item in the "Sorces" menu, ITunes Library to the IPod, just right click or VO + "shift" + "m" and go to add to add to playlist. In the submenu, choose your IPod in the case of the shuffle, or your IPod's playlist in the list. Note, Right clicking with VO + "shift" + "m" doesn't always work, so just restart ITunes and Voiceover if it does not.

But first deal with getting your IPod showing up in the ITunes "Sorces" list.

To sync your iPod, try going to add new library in your files menu while in the iTunes application. It will ask you to pick a source, and just navigate to the iPod you have running, and then it will sync accordingly.
