This works in list mode just fine for me. I like using command-shift-a better than going to the dock because I can access All the apps rather than just the few in the dock. Command-shift-U also opens the utilities folder so you can get to things like the Terminal or Disk Utility. If you have multiple things that start with the same letter you can type the second letter quickly to jump there. So in my Applications folder S takes me to Safari but typing SK takes me to Skype.
