It's worth pointing out that there's a thread entitled "making VLC the
default player for mp3 files" or something similar happening on list
as I type that would've answered this question.  Not having a major
dig here, just saying that it's good to read as much as you post when
starting out because you'll find you learn things you didn't even know
you needed to know... bad grammar alert lol!!

I've reposted the steps to do this below just in case you don't have
the reply in the other thread still:

You can do this from within get info.  Hit command-I on an AVI file.
Interact with the scroll area.  Use VO navigation, the
item chooser, or whatever method you prefer to find the open with
section.  Whatever the selection is currently, it'll be a pop
up menu, so hit space on that and use your arrows to scroll up or down
to VLC.  VO right a few times from there until you get to change all,
the OS will bring up a dialog confirming you really want to do that,
and once you confirm it you should be in business.
