There are two approaches as you say, but the two approaches use the same
underlying formatting capabilities. The difference lies in how the
formatting is applied and saved. If you use styles then you save your
formatting choices in a style and can then apply that style to any text.
If you choose Format > Bullets and Numbering, your formatting choice are
simply applied directly to the currently selected text.
The principle is the same as with the Paragraph, Character, and Page
windows.
You might already be well aware of this, I haven't followed the entire
thread, but it's an important distinction and a point worth clarifying.
And as a raving style supporter ;> I think anything even moderately
complex is worth doing through styles. Not only is it then easy to apply
that same formatting again, but you can easily update the formatting if
you discover you need to do it differently, by just updating the style.

What "styles" document (link?) do you mean? There's quite a lot of ref's and
doc's at that site.
