I want to copy over my pst files from another computer and stop using Outlook.

Is there a way? Is there a client.

Yes and no. You will have to convert the pst files to another format on the computer on which they are already in existence, unless you install Outlook on the computer to which you want to transfer your email data. The best bet is to install Tunderbird on the other machine and then, ensuring that ALL pst files that you want to transfer are open in Outlook, import Outlook data into Thunderbird. You will also need to import your Addressbook (aka Contacts in Outlook) in the same manner. Then go here: http://kb.mozillazine.org/Thunderbird_:_FAQs_:_Changing_Profile_Folder_Location to see how to move your TBird profile from one machine to another

Of course, people will continue to send me meeting invitations via their Outlook. Will they work?

If you install either Lightning (the integrated Thunderbird Calendar) or Mozilla Sunbird (the stand-alone Calendar) then AFAIK they should.
You can get both those here:
