You have various choices:
a. Tools|Autocorrect|Options > Replace bullets with
  you can turn the feature off
b. Format|Autoformat|While typing
  you can turn all autoformat features off in one click
c. Ctrl-Z
  just revert the automatic change while you type

I dont mean to complain over actually great free software but this probably
needs to be fixed.

It's not only free, it is open source. So anyone can help with documentation, testing, translating, coding ..
