You should set up two printers (using the same printer of course); one with the foomatic & one with the gutenprint. That way you can configure & experiment as you wish. I have 5 different printers (color, photo, duplex b/w, default b/w, gutenprint) for my single Canon MP750. Set the base settings in System|Administration|Printing|Properties| and then try in OOo to see if they match. I don't know if it's worth trying, but some time ago the OOo printer admin utility used to be needed for some settings. You can give it a try to see if it makes any difference.
