You should set up two printers (using the same printer of course); one
with the foomatic&  one with the gutenprint. That way you can configure
&  experiment as you wish. I have 5 different printers (color, photo,
duplex b/w, default b/w, gutenprint) for my single Canon MP750.

That I did. Never risk breaking the one that works :-)

Set the base settings in System|Administration|Printing|Properties| and
then try in OOo to see if they match. I don't know if it's worth trying,
but some time ago the OOo printer admin utility used to be needed for
some settings. You can give it a try to see if it makes any difference.
For Ubuntu:

$ /usr/lib/openoffice/program/spadmin

spadmin shows the same problem, not altogether surprisingly.

I'm currently using yet another driver - foomatic/pxlmono. It's minus the esoteric options that seem largely irrelevant for normal use, but does have the economy/standard toner save mode (although controlled in an unexpected way). spadmin seems to track some but not all of the properties as set by the ubuntu print manager stuff.

I'm off and away for the week - will give time to sleep on this one :-}
