I'm trying to think of a single product where most of the
actual construction process was *not* carried out by junior or
inexperienced staff.  Architects don't lay the bricks and mortar, cars
aren't assembled by designers! Is software that much different?

There are many kinds of products that must be constructed by highly skilled workers -- writing, music, artistic performances and products of all kinds, athletics. The architect / construction worker analogy is not appropriate for software development. The project manager acts like a foreman or supervisor to the developer, but the roles should really be more like editor and author.
