Hi Simon and Stephan, I quickly read through this thread so apologizes if I miss your point... In order to ensure that new virtual hosts are dynamically taken into account, you need to call Component#updateHosts().
Regarding OSGi usage and hot addition/removal of applications, we have a project going on, led by Bryan Hunt that will be integrated to Restlet in version 2.2. So, if you remove, you have to see, what providers and so on you have to remove, and which you have to leave, because they are also added by another JAX-RS-Application. I've long time not looked into the code, so I can't tell something to setApplications(). You could implement a clear, but don't forget to readd the default providers and so on; there must be a method for it somewhere (in the JaxRsRestlet?).
