Andy, I've never used or worried about the font feature, but I will at least clarify that the "browse" button you refer to is a Java applet (so the browser needs to support that) and it needs to be locatable on the web server (could be a problem with that). Finally, those applet-based browse buttons in the CF Admin rely on an RDS connection to the server, so if you have not enabled RDS, they won’t work. They are not pointing at your local machine but instead at the drive(s) on the remote machine (which of course is local if the CF Admin is for a local copy of CF, but the CF engineers didn't design it to make that distinction).
As for why the fonts aren't working, that's where my lack of experience prevents me helping. I will point out that there is both online help in the CF Admin (the ? in the top right) and the CF docs Admin/Config guide which may help better understand how the registration process works. As for using the fonts in the CFDOCUMENT (or related tags that leverage the registered fonts), perhaps there's more on this in the Developing CF apps guide in the docs (as opposed to the CFML Reference) that may provide more info.
