I'm running Postfix + Policyd + MailScanner + Spamassassin + ClamAV on a VM and
extremely happy about it.
Start with MailScanner (http://www.mailscanner.info/) and work you up with the
other modules.
A must on those days is greylisting (policyd in my case), with this feature alone
I catch >90% of the spam.
