I take it that you're using the Touch's built-in server?

Why not do this ... Get rid of the Touch and install some type of
computer and the touchscreen that you desire. The computer should have
little problem with the screen. Run LMS server and Squeezeplay on the
computer. The only thing you'll have to do is adjust the Squeezeplay
screen layouts for the larger display. (You're going to have to do this
anyway.) The Touch's screen is 640x480 and the screen that use will most
likely be 800x600. The aspect ratio is the same, but I think that if you
use the Touch or Squeezeplay interface it will produce too small text
and controls to be usable.

The computer could be a typical miniITX car PC installed under a front
seat or in the trunk, or something a little smaller that fits into the
dash. One of Intel's new NUC-sized computers might work well. Or, you
might use a Wandboard system, for which software is being 'actively
developed by users in the Squeezebox community'

With a car PC you'd also have other options for music playback software
instead of using LMS, plus the ability to run GPS mapping software,
