What they write is only true for fast disks.

"If applications want more memory, they just take it back from the disk cache."

I you write to a slow filesystem, it takes it's time until applications "get it back from disk cache". If you write to davfs or sshfs through a slow DSL line (upload 600 kbit/s) this takes endless time.
