Did you bleed the air from the cooling system, when you changed the
thermostat? The bleeder screw is on top of the thermostat housing. 
 When the car is sitting still, and up to temp, does the cooling fan come
on by itself?  Does the A/C fan come on when you turn the A/C on? You
might have a faulty tempreature sender, and not actually overheating.
