I would try pointing the vehicle in a safe direction in an empty parking lot, fully applying the brake, and applying the throttle. See if it shudders while standing still. Do this when it's cold and again when it's warm.
It sounds like you could have a weak spark, or a bad sparkplug. Usually when you get a shudder under a load that smooths out the rest of the time, it's ignition related. It could be a thermal failure of one of the coils. Usually a misfire will set a code. It might be that it just hasn't gotten bad enough yet.
