How about switching from choosing what to back up to backing up
"everything", e.g.  /home, /etc, /var/spool, and then blacklist bits of
those you don't want, e.g. directories called `.cache', otherwise you're
going to slowly improve your whitelist every time you find something
missing upon restore.  :-)

Ideally, you can examine the backup and see what's taking the space in
the same way you would for the area that was backed up, and that shows
more things to blacklist once you're certain you don't need them.
