I think the license is stored as a bitstream attached to the item; I don't think it's in the database as a text field.
If I look at our items, I see each has a LICENSE.txt bitstream in the LICENSE bundle. The web UI seems to let you delete/add files to eth license bundle, but that's probably not practical if you have more than a few items to update.
