Hi Sherry! Welcome to DSpace. I'm not sure about the best resource for getting started, but I can answer your question about the Administrator Search. To manage submissions/drafts, go to the top right menu to the login drop-down and click "MyDSpace" (or whatever custom name you have there for your site). From that page, there is a lefthand menu called Show - you can toggle through Your Submissions, Supervised items, and Workflow tasks. The draft items you are looking for are probably under "Workflow Tasks."
It's a little confusing because the Admin Search menu looks a lot like the MyDSpace menu. But saved unpublished items, and items that need approval, will appear only in MyDSpace - at least that how it works for us (DSpace 8). I hope that helps!
