Thanks Hardy! I appreciate seeing where and how to remove the full text 
from the search results.
It sounds like it is 'all or nothing' -- at least via the bean you linked 
to.

Since the granularity of access to bitstreams exists, does it make sense to 
impose those same restrictions on showing the full text in the search 
results based on the credentialed (or anonymous) session of the searcher?

Should this be a Jira ticket if so? I didn't want to presume this problem 
exists beyond our installation without another site's confirmation.

I would boil it down to this:
"Search results should only show full text extracts (KWIC) for bitstreams 
the searcher has the permissions to view".
