Hi Lucas, I've not yet heard of others encountering this issue. But, it's always possible it's a new bug or a bug in whatever version of DSpace you are using.
One piece of advice I can offer is that you may want to use our Troubleshooting Guide to see if any (hidden) errors are occurring in the user interface or backend logs *when you create or save an Item Template*.
