This is held in [DSpace]/config/dspace.cfg
dspace.name = DSpace at My University

If you want to change how they look, edit the CSS file:
[dspace-src]/jsp/styless.css.jsp
If you want to change their location, edit the JSP in which they appear:
[dspace-src]/jsp/example.jsp
If you want to change their text, edit:
[dspace-src]/config/language-packs/Messages.properties
