One can do a lot of things. He could even install gimp on the proxy
server.
My guess on his proxy server with the two legs (one public, one private)
was that he wanted to provide Internet access. My other guess was that
the network where the proxy is in consists only of one network segment.
By trying it without the default gateway he actually would have tested
that.
The point with the default gateways is it is something to help you in a
small network. When an Internet Provider gets is connected to two
different networks, his routers will not have a default route at all and
thus will not have a default gateway anymore.
They will then know world wide all the routes. When you have only one
connection to the Internet, all those thousands routes will point to the
same router ('gateway'). So there is no point of entering all of them.
You just set one route that captures all the traffic - the default
route.
