Hi Etienne,
to use UMFPack you have to install suite sparse, AMD, UMFPack and some more software tools. If you install suite sparse from your distribution, it will pull all dependencies automatically. Only openSuse packages have a bug and you have to use the packages from
their science repository.
It gets installed to the default locations, thus you do not have to add any flags. Recompile dune-istl and dumux and you are done.

You can find an example using UMFPack in
test/freeflow/stokes2cni/

If you do measurements, I would like to hear some numbers compared
to SuperLU.
