I believe they use DiskCopy for that. Never tried it myself, though.

AFAIK, that's the way you're supposed to use these images. One way around it is
using an external hard disk. Another way, but I'm not sure if it'll work, is to
mount the image on another mac, and share the virtual cd through ethernet or
localtalk.
