First you want to make sure you have the newest Epson 600 driver here: http://support.epson.com/hardware/printer/inkjet/sc600_/filelibrary.html There are two you need to download. One near the top, and one at the bottom. Once you have it installed, you want to increase the memory for EpsonMonitor2 or EpsonMonitor3 (whichever you have) to 5000K, if you can spare it.
