I've never tried myself. What I'm counting on is, the iPod can be connected to a mac as a FireWire hard drive, and then you might be able to copy all of your MP3 files to it by hand in a certain folder so that the iPod would see them. True, not as cool as having iTunes do everything automatically... but if it worked it would be an easy way out of installing OS 9.2.1.
