You can actually use command-delete in any Finder back to System 7.5.5.
It's disabled by default up to 7.6.1, so you do need a small extension to
set a gestalt value at boot time and enable the feature, as well as a
couple of other useful ones like command-R to Reveal Original, or
control-drag to create an alias (instead of command-opt-drag). "Finder
Extensions Enabler" is one such extension, and "Secret Finder Features" is
another. I'll put a copy of the former at http://toh.dyndns.org/toh/ffe.hqx
in case anyone wants it for an older Duo. btw, another trick that makes it
easier to trash stuff (especially with a trackball or pad) is to take
advantage of the non-rounded screen corners and place the trash can's
"Trash" label exactly at the corner of the screen, so that whipping the
pointer into the corner will take you there.

There are some more esoteric hidden features in the 8.x Finder series,
which can be enabled through yet another bitmapped gestalt value. An
extension to control those (requires ResEdit to adjust the settings) is
still available at
http://www.macintouch.com/finderfeatures.hqx (despite Apple's tightassed
request to have it removed).

Finally, the excellent freeware StickyClick will provide click-once menus
that work just like the OS 8 ones as far back as 7.1 (I think). As
mentioned, the Appearance Manager can also be back-installed (or you could
use Aaron), and so can Open Transport 1.3.1. I think I'd still prefer to
run 8.1 on a 68040 if you can spare the 3MB of RAM, but it's worth noting
that most of the features are in fact available to past OSes (not to
mention 68030s).
