Have you checked the configure output? Does PKG_CONFIG_PATH appear in your XZ module file? If so then it should be able to find it in PKG_CONFIG_PATH at configure time. If either of those is not the case then you probably need Autotools as a builddep of your XZ/MRtrix easyconfigs?
