Can you share the full (preferably debug) EasyBuild log thay shows the
issue?
Maybe the MRtrix build scripts hardcode system locations somewhere?

your XZ module file? If so then it should be able to find it in
PKG_CONFIG_PATH at configure time. If either of those is not the case
then you probably need Autotools as a builddep of your XZ/MRtrix
