Is there any concept of writing plugins or extension to ebookc?

Not yet but we are seriously thinking about implementing this feature.

May be it will be found in ebookc v1.4 which is expected to be released in a couple for weeks.

Or are
there any plans to move ebookc to github so it can be forked or receive
enhancements and pull requests for new features?

No, not at all.

I don't think this will ever happen. This is simply not how XMLmind Software develops software:

1) We need a *quality* software component for one of our *commercial* products (https://www.xmlmind.com/products.html).
2) We develop it.
3) The closest competitor is open source software.
4) Therefore our software component is also made open source software.

End of the story.

For example, this is what happened with XMLmind DITA Converter, A serious alternative to the DITA Open Toolkit (DITA-OT). See https://www.xmlmind.com/ditac/

--> However ebookc being open source software (Mozilla Public License Version 2.0, https://www.xmlmind.com/ebookc/MPL-2.0.html), you are welcome to create a fork and store it in github.

For example I like to change the behaviour in markdown for images, so it
supports automatic image caption generation using the image title.

Makes sense.
