Mike,

I think you may need to connect the Nokia tools to the comm port that 
your BlueTooth has connected to the ECMT client over, or in English:

1) Browse the services via bluetooth on the phone after starting the 
Debug Bluetooth client on the phone
2) Connect to the ECMT service - which starts a comm port connection
3) Run the program via Start -> Programs -> S60 Developer Tools -> 3rd 
Edition SDK -> MIDP -> Tools -> Device Connection
4) Select the comm port that was just connected and hit connect

This should allow the Nokia tools to connect to the phone.

I'm guessing though as I haven't actually got this to work yet, as I've 
only been trying for a day and a half :p

Neither?

The Nokia "Bluetooth Debug" software on the phone talks to the Nokia 
tools on the PC. This is then interfaced in Eclipse as some sort of 
custom Nokia plugin, it's not a standard debugging environment like a 
remote client - which means it can only be used in Eclipse...
