Hello!You can view how it is already made in nuxeo. For example you can
search in source folder of nuxeo for *.xml files with content:
<process-definition name=
and you will find examples.
I think some simple example is given here:
/nuxeo-platform-forum-workflow/src/main/resources/process/forum-moderation.xml
This process defines moderation workflow for comments in forum. In this
plugin you can view extension point and how to deploy contribution to it.

you can view how to create process instance:
jbpmService.createProcessInstance((NuxeoPrincipal) currentUser,

I think this can be very first step in order to use custom workflow.
