The name of the site (and the description) is displayed through logo.ftl
nuxeo-features/nuxeo-webengine-sites/src/main/resources/widgets/logo.ftl
Also, you could supply different values (if you want for instance to
show something else) through AbstractSiteDocumentObject#getArguments()
nuxeo-webengine-sites/src/main/java/org/nuxeo/webengine/sites/AbstractSiteDocumentObject.java
Just set the arguments name and siteDescription to what you need.
