I got round the issue by creating a new theme that uses an alternate logo.ftl file that skips rendering of the name and description.

Also, you could supply different values (if you want for instance to show something else) through AbstractSiteDocumentObject#getArguments() nuxeo-webengine-sites/src/main/java/org/nuxeo/webengine/sites/AbstractSiteDocumentObject.java
Just set the arguments name and siteDescription to what you need.
