I got round the issue by creating a new theme that uses an alternate
logo.ftl file that skips rendering of the name and description.

Also, you could supply different values (if you want for instance to

nuxeo-webengine-sites/src/main/java/org/nuxeo/webengine/sites/AbstractSiteDocumentObject.java
Just set the arguments name and siteDescription to what you need.
