Ok, in fact my simples metadatas for old documents in the table 'fulltext' are not set correctly but for new documents no problem.
If I modify+save an old document nuxeo reindex it and it's OK. So, I have made a service that save recursively all the repository but it's modify also the version, the historic, and add a owner for all documents. To not modify the version, the historic, ... A poor solution was to make a dump of my database in my dev environment then run my service to rewrite good datas in 'fulltext' and copy the new 'fulltext' table on my production environnment. But, this solution implies to stop the service on the prod.
